Description
IN THE VINEYARD
Produced from a Swartland vineyard planted in 1978. These trellised vineyards are planted on a south-east facing slope and are dryland farmed. The soils are predominantly koffieklip (decomposed granite and iron-rich clay).
WINEMAKING
Our journey of discovery led us to an expressive vineyard in Paarl for our 2024 Chenin Blanc. The grapes were handpicked very early in the morning, which allowed for them to be delivered cold to the cellar, where they were destalked and gently pressed. The free-run juice settled for two days before the clear juice was racked off and cold fermented in stainless steel. On completion of fermentation, the wine was left on the fine lees for several weeks before bottling.
