IN THE VINEYARD:
This wine was produced from predominantly Darling Sauvignon Blanc Grapes grown on the cool, rolling hills on the Cape west coast. These trellised vineyards overlook the cold Atlantic Ocean, which are planted on some of the country’s finest red oakleaf soil. The deep, iron rich granite offers sufficient natural water to the deep-rooted vines without artificial irrigation. Due to the low crop and ongoing drought this wine was blended with Coastal and Paarl wines for the 2019 vintage. The result is a Sauvignon Blanc with tropical flavours, fresh acidity and character.

With harvest occurring before sunrise, the grapes arrived at the cellar cool. Bunches were destalked and crushed under reductive conditions into the static drainers and then press. The skins were pressed at 0.9 bar of pressure and the juice was cold settled for 48 hours, prior to fermentation. The clear juice was fermented at cool temperatures for two weeks in order to preserve the natural fruit flavours. No malolactic fermentation was allowed and the wine was left on its lees for three months before blending and bottling.
Our Stone Town Sauvignon Blanc is wonderfully aromatic and tropical in style. This wine has full of notes of grapefruit, lime and melon with a fresh vibrant finish. A perfect everyday easy drinking wine
