IN THE VINEYARD:
The majority of the Cabernet Sauvignon and Merlot is grown in the misty, rolling hills outside Darling, on the Cape West coast. The Darling area has the Atlantic ocean breeze that helps to create a cooler climate that allow for longer ripening periods, ideal for both these varieties. Some Paarl Merlot was also included to bring bright red fruit to the blend.
The grapes were machine harvested early in the morning and delivered to the cellar, where they were destemmed and gently crushed into stainless steel tanks for fermentation. Pump overs were done regularly during fermentation, after which the wines were pressed off the skins and racked into French oak barrel for malolactic fermentation. The wine was matured for 16 months in French oak barrels, 25% being new oak. The best barrels were selected and blended prior to a light filtration and bottling.
Deep garnet in colour. The nose shows classic notes of blackcurrant, violets and hints of cigar box. The palate is medium bodied, with flavours of cranberries and plums with subtle oak spice, finishing with refined tannins.
