Inspired by this rich, fragrant culture, our voyage for the most elegant and flavourful maritime grape varieties has transported us to the cooler regions of the Cape. While the Merlot enjoys the crisp Atlantic breeze just a few kilometres from the coast, the Cabernet Sauvignon thrives along the lush mountainous slopes. Together, this blend of classic varieties delivers a deep, rich wine that is wonderfully aromatic and a strikingly fresh expression of these cultivars. Pairs beautifully with everyday moments.
IN THE VINEYARD
The Cabernet Sauvignon and Merlot is grown in the misty, rolling hills outside Darling, on the Cape West coast. The Darling area has the Atlantic ocean breeze that helps to create a cooler climate that allow for longer ripening periods, ideal for both these varieties.
The grapes were machine harvested early in the morning and delivered to the cellar, where they were de-stemmed and gently crushed into stainless steel tanks for fermentation. Pump overs were done regularly during fermentation, after which the wines were pressed off the skins and racked into French oak barrel for malolactic fermentation.The wine was matured for 14 months in French oak barrels, 25% being new oak. The best barrels were selected and blended prior to a light filtration and bottling.
